Passionate, curious, and a lover of all things beautiful and delicious, Xavier is a perfectionist artisan distiller from the Pays de Herve region in the province of Liège, Belgium. An epicurean and free spirit, he enjoys good food, wine, spirits, the pleasures of life and cosy atmospheres in good company. A globetrotter and traveller, since his late teens he has travelled throughout Europe, the Mediterranean, South America and, for more than 30 years, the African continent.
During his many trips and stays, he discovered local craft beverages and drinks in bars, spices and herbs, fruits and roots with captivating aromas and various virtues in markets.
He is a true lover of local and quality products.
An agronomist and chemist by training, he develops new spirits based on fruit molasses in his laboratory.
He created Baylimara© and registered the trademarks and recipes for his various spirits and liqueurs. He also surrounds himself with a team of passionate and talented people. Like him, his barrels love to travel and enjoy a good time in the Mediterranean. The temperate climate, hot and dry in summer and mild and humid in winter, as well as the sea spray and sea air, give his creations unique flavours and aromas.

Our creations will blow you away
Our spirits are made from the finest raw materials, mainly from the rich soil of the Liège area in Belgium.
Following a long, controlled fermentation, our master distiller gradually increases the heat in his copper still to extract a precious distillate with fresh, intense flavours of green apples, ripe pears and fresh fruit.
In the purest tradition of the « Great French Spirits », your Signore Clouzo© is matured in oak barrels.
In the cellar, it will be enriched with wood and empyreumatic flavours.
For your Signora Clouza©, like a Bourbon, she will be matured for many months in gentle contact with the wood, bringing it softness and exotic flavours.
Under the supervision of our cellar master, thanks to the generous climate of the Méditéranée, these precious pieces will be regularly inspected and probed to determine the best time to harvest this elixir.
As for Miss ClouzeT©, that ingenuous little androgyne, she will patiently enjoy several months in her alcove in the luxurious company of oranges and coffee beans.
